Honey Lemon Bruschetta
Ingredients
Mint leaves
Sea salt
Spreadable Butter or Margarine
1/2 teaspoon of olive oil
1/2 - 3/4 loaf of french bread or a medium loaf of crusty Italian bread
1 large garlic clove cut in half (or 2 small ones)
1 tablespoon of honey (or 1 big squeeze of the honey bear)
2 cups ricotta
2 lemons
Instructions
- Cut the bread on the bias. Butter both sides and toast under broiler or in the oven until pale brown.
- After bread has been toasted, rub with garlic clove until it's smothered in garlic.
- Mix ricotta, lemon juice, zest of one lemon, olive oil, and honey together.
- Spread the ricotta mixture equally onto each slice of bread.
- Bake in oven for 3-4 minutes, or until bread is golden brown.
- After the bread has cooled, zest the other lemon on top of the bread and garnish with mint leaves.
