August Recipe

Yummmmm!

Honey Lemon Bruschetta

Ingredients
Mint leaves
Sea salt
Spreadable Butter or Margarine
1/2 teaspoon of olive oil 
1/2 - 3/4 loaf of french bread or a medium loaf of crusty Italian bread
1 large garlic clove cut in half (or 2 small ones)
1 tablespoon of honey (or 1 big squeeze of the honey bear)
2 cups ricotta
2 lemons 

Instructions
  1. Cut the bread on the bias. Butter both sides and toast under broiler or in the oven until pale brown.
  2. After bread has been toasted, rub with garlic clove until it's smothered in garlic. 
  3. Mix ricotta, lemon juice, zest of one lemon, olive oil, and honey together. 
  4. Spread the ricotta mixture equally onto each slice of bread. 
  5. Bake in oven for 3-4 minutes, or until bread is golden brown. 
  6. After the bread has cooled, zest the other lemon on top of the bread and garnish with mint leaves.
